What truly sets it apart though is its ageing process which consists of letting it sit for 2 years in an ex-Brandy Vat before being transferred to imported American Oak Bourbon barrels for the last three years of maturation. A rich golden brown rum, it has a delicate palate that greets you with notes of toffee apples, caramel and a gentle spiciness that slowly gives way to floral tones mixed with clover honey.
